I love cooking with boneless & skinless chicken thighs. Not only are they a very moist cut of meat – but they are also a refreshingly frugal choice!
I got a great deal on these Tyson® Fresh Chicken Thighs at my local Walmart, and I chose to pair them with two of my other favorite ingredients – Artichoke Hearts & Capers!
Artichoke & Caper Chicken is a mouthwatering meal that can be made using lot’s of things you may already have in your pantry!
- About 1/4 cup all-purpose flour
- 8 Tyson® Fresh Chicken Thighs
- 3 tablespoons olive oil
- 1 cup chicken broth
- 1 can (14 ounces) artichoke hearts packed in water, rinsed, drained, and quartered
- 4 tablespoons rinsed and drained capers
- 3 tablespoons butter
- 8 ounces pasta ( I used spaghetti)
Fill a large pot with salted water and heat it to a boil. Place your flour in a shallow dish, and season liberally with salt and pepper. Dredge your Tyson® Fresh Chicken Thighs, shaking off excess flour. Cook chicken on a grill or in a large skillet, heat 1 tablespoon oil over medium-high. Cook chicken until light golden, 10 to 12 minutes on each side or until it reaches an internal temperature of 170; transfer to a dish.
Add chicken broth to skillet, and bring to a boil; cook until it’s reduced by half. Add in your artichokes, capers, and the already cooked chicken. Gently mix and bring to a boil. Immediately remove skillet from heat. Swirl in your butter, and cover to keep warm!
Add your pasta to boiling water. Cook until al dente, and then drain. Serve Tyson® Fresh Chicken Thighs with artichoke sauce poured on top, next to pasta.
Our family loves the savory & slightly salty taste of the capers and artichokes in this recipe – and we find its a great way to introduce kids to some new tastes!
