Paleo Crock Pot – Chicken Curry

Are you are trying to eat less carbs as a whole, or maybe trying out a full paleo diet? Then this recipe is for you. But it’s also for you if you just like super yummy food you can make in a slow cooker or crock pot! This slow cooked chicken curry is delicious!

INGREDIENTS:

  • 2 Tablespoons curry powder
  • 1 Tablespoon paprika
  • 1 Teaspoon black pepper
  • 2 Teaspoons sea salt
  • 2 pounds boneless, skinless chicken thighs
  • 4 garlic cloves, chopped
  • 1 medium yellow onion
  • 2 cups carrots chopped ( I used crinkle cut style already cut in a bag from the grocery store. Time saver!!)
  • 4 or 5 celery stems chopped
  • 1 Cup of  regular canned organic coconut milk (not the light version)
  • 1 Cup chicken broth

This video shows how easy this recipe really is:

DIRECTIONS:

  • Mix all the dry spices together, and then pour over chicken thighs already in your crock pot, tossing to coat.
  • Add garlic, onion, carrots & celery on top
  • Mix coconut & chicken broth together, then pour over veggies and chicken

Set your slow cooker for 4 hours on high, or 6 to 7 hours on low setting. Serves 4 or 5 people.  ENJOY!

    I do not follow the Paleo diet however I am a diabetic and try to eat few carbs. This chicken recipe looks delicious and I think I am going to try it, plus I love cooking in the crock pot.

    OMG – this looks SO good! I’m not into the Paleo diet, just yummy food, and this looks so good! I especially like the Indian-influenced taste with the curry. Plus hiw can you go wrong with the crockpot doing all the owrk? LOL! Thanks for a great recipe!

    I don’t do Paleo at all because I try not to eat meat at all – but this recipe sounds so good I will try it with Seitan or Tempeh instead of the chicken. Thanks!

    Thank you for the video of the crock pot curry chicken. It really does look easy. My husband is of Hungarian descent & would absolutely love the combination of spices. We have been eating Paleo healthy for about 5 months so this recipe is perfect for us. Thanks again.

    I just made Honey Curry Chicken yesterday and my family scarfed it down for supper. It was a very simple version with about 5 ingredients and then I served it with rice and noodles. I like that the curry makes the house smell good, but I didn’t like that my clothes smelled like curry all. day. long.

    I just found this recipe through Pinterest, and I think my husband will like it. He gets a little worried about how crock pot recipes can be high in carbs and cheese, but he LOVES curries!

      @Sarah Renker, did you end up making this? I find most recipes I want to try are filled with comments about how it looks and hardly ever about them actually trying it.
