Tips for Preparing a steak Perfectly:
- Season – Once your beef is at room temperature, season it with salt and pepper. Or your favorite steak rub. The key though, is to let your beef rest with the seasoning on, at least an hour so that it truly penetrates!
- Sear – Heat a heavy skillet on high, until it’s really hot. Add some oil ( I use olive oil) and sear the steak on each side. You want a thick brown crust to appear before switching sides. Use a thermometer to reach the desired done-ness you prefer.
- Rest – I know you can’t wait to cut into that steak! But you you will lose so much flavor if you do that too soon. A small fillet mignon might just need 5 or 6 minutes to rest, where as a roast might need 20 or 30 minutes. Here is a cheat! A good rule of thumb for resting is to aim for around the same amount of resting time, as time it took to cook.

My very favorite? The Top Sirloin! The thick cut was perfect for getting a good sear and crust on the outside, while still being able to keep the center juicy and tender. I like my steak medium rare, and this cut is perfect for that! Tender, juicy and with amazing marbling that I would never find in steaks at my local grocery store.
I loved all the cuts I tried, but this one is going to be a household staple for us!
