There is something so perfect about the smell of roasted chicken and lemons. It just begs you to open the oven a few times so you can take a deep breath of its homey and sweet aroma! And making Lemon chicken is pretty easy as well. Here is my favorite Lemon Chicken Recipe – it can be made using all different cuts of chicken.
Just keep in mind this Lemon Chicken Recipe does best with the skin on, and cuts of chicken without the bone in, will be cooked slightly less time than suggested here.
Ingredients:
1/4 cup olive oil
4 tablespoons minced garlic
1/3 cup dry white wine (I used a Chardonnay)
1 tablespoon grated lemon zest (2 lemons worth)
2 tablespoons freshly squeezed lemon juice
2 teaspoons dried oregano
1 teaspoon minced fresh thyme eaves
Pinch of Kosher salt and fresh ground black pepper
4 bone-in, skin on chicken breasts or leg quarters
1 lemon
Directions:
Preheat the oven to 400 degrees F.
Heat the olive oil in a small saucepan over medium-low heat, add the garlic, and warm for about 60 seconds, but don’t allow the garlic to brown. Remove pan from stove, and off the heat. Add your dry white wine, lemon zest, lemon juice, oregano, thyme, and healthy pinch of salt and pour into a 9 by 13-inch baking dish.
Pat your chicken dry and place them skin side up on top of the lemon sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut your lemon into wedges and place amongst the pieces of chicken.
Bake for about 40 minutes, depending on the size of your chicken pieces, or until the chicken is done and the skin is lightly browned all over.
If the chicken isn’t browned enough, put it under your broiler for about 2 minutes. Cover your pan tightly with aluminum foil and allow chicken to rest for 10 minutes or so. Serve hot with the pan juices poured over top. Great to serve with noodles and broccoli covered in lemon sauce as well!
